The rest of the shooting festival: celery soup
There's some leftover soup today.
After a great children's birthday, the parents in the evening but left as empty covers on the couch (knight cake and so on - we remember), a lavish lunch is just not there. The convalescence will take at least two more days.
What is the fridge made of?
Open the door:
2 tubers of celery , 1 apple , 1 onion , some garlic and 1 pack of milk
So get to the soup:
Onion and garlic (1 toe is great - who likes it more peel and chop.
Peel the celery tubers and cut into pieces (can easily become rough).
Heat 1 spoonful of olive oil in the pot and add onion and celery sauté until they have some color. This should go very slowly, the celery is thereby quite mild and develops sweetness. Then fry the garlic (not too long - otherwise it will be bitter).
Pour the whole with about 0.5 liters of water , some vegetable broth in powdered form and 1 good teaspoon of salt .
Cut the apple with peel and put it in the pot. Boil and simmer for 15 minutes.
When the celery is well tender, add a generous dash of milk and a puff of butter and puree until smooth. Season with pepper and salt if necessary. Ready.
If you want something a bit more sophisticated, you can top up on the soup: Prima are herbs, fried pieces of ham or crunchy bread crumbs.
I had one more (happy organic -) Bratwurst from the children's birthday party, which I sliced and fried with a fresh onion in the pan. With some fresh marjoram that was perfect with the soup.
Man and child thought it was delicious. Now comes the afternoon nap.
